Tonight I made an Apple Cake. It turned out pretty good!  This is the recipe:
Ingredients:
1 egg
1/2 cup of sugar
1/3 cup of canola oil
1 tsp of vanilla
3/4 cup of flour
1 tsp of baking powder
1 pinch of salt
1/3 cup of brown sugar
1 tsp of cinnamon
4 small to medium apples, peeled, cored and sliced

Directions:
In medium bowl, beat eggs and sugar until thick and light
Beat in oil and vanilla
In separate bowl, whisk together flour, baking powder and salt
Add to egg mixture, stirring just until blended (batter will be thick)
In small bowl, mix brow sugar with cinnamon
Arrange apple slices in greased 8inch square metal cake pan
Sprinkle hours with half the brown sugar mixture
Carefully spread batter over apples; smooth top
Sprinkle wiht remaining brown sugar mixture
Bake in centre of 350 degree oven until cake is firm and pulls away slightly from sides of pan, 35-40mins
Cool for 10mins before serving
