17.78K Run

Yesterday I ran 17.78K in 2hours and 34mins.  I took it slow as I did not want to get sick afterwards, like two weeks ago.  Here is my schedule for next week:

Monday: Rest Day
Tuesday: 8K Run
Wednesday: 6K Run
Thursday: 10K Run with Running Group
Friday: Rest Day
Saturday: 5K Pack Run
Sunday: 20K Run with Running Group

Last night I made some Corn Chowder for dinner.  Here is the recipe:

Ingredients:
2 tablespoons of butter
2 cloves of garlic, chopped
2 celery stalks, chopped
1 large carrot, chopped
2 potatoes, diced
2 cups of vegetable broth
2 cans of corn
1/3 cup of all-purpose flour
3 1/2 cups of skimmed milk
1/4 teaspoon of dried thyme
salt and pepper to taste

Directions:
In a large soup pot, heat the butter over medium heat
Add the garlic and cook for 2-3mins
Add the celery, carrot and potatoe
Add the vegetable broth and cook until vegetables are tender.  Will take approximately 10mins
In a medium bowl, whisk together the flour and milk
Pour mixture into the soup pot and stir
Add in the corn, thyme and salt and pepper
Let the soup simmer for 20-30mins
